«Selim pepper,» also known as «Selim seeds,» «Guinea pepper,» or «Kili pepper,» is not actually a true pepper. It grows in Africa on a massive tree known as Xylopia aethiopica, which can reach heights of up to 20 meters. Selim pepper resembles a small, long, flat, ebony-colored bean (3 to 5 cm on average). This “false pepper” has flavors reminiscent of cubeb and nutmeg, with a very aromatic and slightly pungent taste.
It pairs particularly well with cooked vegetables, winter stews, sauerkraut, potatoes, or—for something more exotic—plantains or sweet potatoes.
