Whole or sliced ginger is the dried rhizome of Zingiber officinale Roscoe, in irregularly shaped pieces at least 20 mm long, or in small cut pieces, ranging in color from light buff to pale brown, fibrous, peeled and bleached, washed, and sun-dried. The dried rhizomes may also be ground.
