Our rouille spices are the perfect complement to traditional Provençal sauce. First of all, rouille is a historic recipe whose ambiguous name reflects its distinctive color. Widely enjoyed throughout the Mediterranean region, rouille is a sauce that pairs well with many delicious Provençal foods and dishes made with potatoes, tomatoes, monkfish liver, and olive oil.
Today, it is often served with croutons or garlic-rubbed bread, especially in fish soup or bouillabaisse.
Rust pairs just as well with fish, shellfish, mussels, octopus, fish soup, Provençal-style snails, and all kinds of Mediterranean cuisine.
Did you know?
Marcel Pagnol, a French writer and filmmaker born in Aubagne, was a great lover of bouillabaisse. However, he had a very hard time accepting that bouillabaisse—a simple dish with humble origins—was being served alongside more refined foods such as lobster or shrimp.
