HOT PEPPER
The Hot Pepper (Capsicum frutescens / traditional spice), an aromatic spice with intense, powerful, and spicy notes, is ideal for enhancing spicy dishes, sauces, marinades, meats, and international cuisines. Prized for its stimulating and digestive properties, it adds warmth, intensity, and character to all your culinary creations. A natural product, it guarantees a controlled level of heat and carefully selected quality.
Hot peppers and so-called «mad peppers» are the dried fruits of plants of the genus Capsicum. As a result, they are recognized worldwide for their intensity, aroma, and culinary versatility. Furthermore, their color varies depending on the variety and drying conditions, ranging from dark red to yellow-green, including shades of orange and brown.
In addition, its natural pigmentation—particularly the red color—changes with exposure to air and light during storage. As a result, its intensity may decrease slightly over time. In its ground form, the color of the chili pepper also varies depending on the species used and the degree of drying.
Different Types of Hot Peppers
There are several grades of chili peppers available to meet the needs of professionals:
- Whole chili pepper (bird's tongue) : Dried fruits measuring approximately 1 to 5 cm, depending on their origin.
- Whole chili pepper, 1–3 mm : Bird's-eye chili peppers, graded and steam-treated, for standardized use.
- Ground chili pepper : made by grinding hot and fiery chili peppers, with no additives.
- Crushed chili peppers : produced by cutting and sifting, with visible red pieces and yellow seeds (up to 40 % of seeds).
Uses and Benefits of Hot Peppers
In cooking, it is used to enhance the flavor of dishes and add a spicy kick to recipes. As a result, it blends perfectly into sauces, marinades, soups, spicy dishes, and processed foods.
