Matcha green tea is a very fine powder made from ground green tea. It is bright green in color. It has a distinctive flavor—mild and slightly astringent—with green notes.
A little history: Matcha tea is made from (very) green tea leaves. This dark green color is achieved by covering the tea leaves several weeks before harvest. Covering the plant causes it to shed a significant amount of chlorophyll. When the leaves take on this lovely dark green color, They are picked and air-dried. After drying, the twigs and other stems are removed so that only the dry leaf remains.
After this step, the leaves are sorted and ground to produce matcha green tea. The leaves are sorted by hand, and only the best and greenest ones are selected. The grinding is also done by hand, using a stone and a mallet to produce this beautiful, fine powder.
