Cajun seasoning is a blend of spices from Louisiana in the United States. That is where the Cajuns live. Originally, it was the French who introduced this cuisine (though it also incorporates Spanish, African, and Native American influences).
The French influence is particularly noticeable in the use of roux. This mixture is generally characterized by its combination of spices, onions, okra (gombos, in Cajun French), and celery, seafood, but also (and especially) crawfish, which play a pivotal role in Cajun cuisine (the animal is abundant there).

The blend has a distinctive aroma. Highly aromatic, with a slight hint of garlic and a spicy flavor, the blend has a mixed texture (coarse powder and leaves). It is orange-red in color with
greenish-gray notes.
