« Audemus It literally means «we dare,» and that is precisely where we begin. The idea is to offer recipes that go off the beaten path. Passionate about spirits since I was young, I was already distilling our family’s liqueurs at home.
Naturally, I wanted to make it my career. That’s why I came to France in 2011—to work with the leading Cognac houses and master the traditional methods.
Two things quickly became clear. First, my goal was to develop a personal project that truly reflected my vision. Second, it seemed possible to start on a small scale by creating a microdistillery inspired by London-style distilleries.
This freedom to experiment has allowed me to develop original recipes. The world of gin offered all these opportunities, combining my passion for spirits with my love of spices and botanicals. We’re constantly striving to create intense and unconventional profiles to surprise tasters. In practice, it’s the botanical blends that give the gin its unique character.

A root or seed requires a specific maceration time and appropriate temperatures during distillation, a key step governed by the European standards for the production of spirits. ». The Pink Pepper Gin was created after several months of experimentation and research. Our goal was to craft a remarkable gin that evolves right in the glass as you enjoy it.
With the first sip, you’ll notice pink pepper, juniper, and cardamom. These top notes bring a lovely liveliness. Next, warm hints of cinnamon emerge. Finally, the whole experience rounds out with rich notes of tonka bean, vanilla, and honey.
