Saffron is a spice made from the dried stigmas of saffron flowers. Because it is so difficult to harvest, ground saffron is one of the most expensive substances in the world.
Far from being useful only in the kitchen, the Egyptians used the spice in many medicinal preparations. The Greeks and Romans, for their part, used it as fragrant plant and burned it to to purify their temples. Saffron pigments have even been found in prehistoric paintings depicting wild animals that date back more than 50,000 years.
Saffron is used today in cooking, particularly to add color to dishes such as paella. It has a distinctive flavor—slightly bitter and a bit spicy.
