WHITE PEPPER
White pepper (Piper nigrum / traditional spice), an aromatic spice with sweet, slightly spicy, and subtly robust notes, is ideal for seasoning sauces, soups, fish, poultry, and refined dishes. Whole white pepper is not a different variety from black pepper; rather, it is processed in a specific way. White pepper is made from black pepper by using the whole dried berry, harvested before it is fully ripe, or from the whole ripe berry of the Piper nigrum, by removing the outer layer of the pericarp. In a book published in 1788, Joseph Mandrillon—a renowned traveler and author of collections—describes this process in detail: black pepper is moistened with seawater, then dried in the sun, and finally stripped of its husk.
The berries are nearly perfectly spherical, 3 to 5 mm in diameter. The color of the pepper ranges from a dull brownish-gray to a pale ivory white. Ground white pepper is made by grinding white peppercorns. without any additives.
The flavor of freshly ground pepper should be distinctive, slightly spicy, and very aromatic. As with wine, the organoleptic characteristics vary depending on the origin, since the terroirs differ.
