Whole organic mace is the dried aril, which ranges in color from reddish-yellow to red
brownish. It may contain a few small pieces of mace. Organic ground mace comes in the form of a brownish-orange powder. It is sometimes slightly «sticky.».
This product has a very distinctive and aromatic scent, though it is less pronounced than when it is ground.
Its flavor is bitter, pungent, and warm, and more pronounced than that of nutmeg, which comes from the same plant.
