Of all the species of lavender, Blue lavender, which is difficult to grow, is a rare product known for its exceptional mildness and its suitability for cooking<\/strong>. It goes particularly well with fish and potatoes.<\/p>\n

Blue lavender is a bushy, evergreen, gray-green shrub. Its blue and purple flowers are very aromatic, with the intensity varying depending on the variety. It is native to the western Mediterranean region; the Romans used it in ancient times to preserve linen and scent baths. In Provence, people began using lavender in the Middle Ages, mainly for making perfumes and medicines. It wasn\u2019t until the 19th century that its cultivation really took off.<\/p>\n

In France, lavender is mainly used to produce essential oils and fine lavender. Today, it grows primarily in Provence, but it is also widely cultivated in Eastern Europe\u2014in Bulgaria, Russia, Ukraine, and elsewhere.<\/p>\n
